The Authentic Inns of the Pikes Peak Region of CO is pleased and excited to announce that our 3rd cookbook entitled "Simply Authentic Cuisine, Volume 2" is now available at all member Inns, by mail order request, and at select area stores.

This cookbook features not only favorite breakfast recipes, but also treats you to the wide array of culinary delights that Innkeepers prepare for their families and friends. Recipes from the Authentic Inns and Cottages of the Pikes Peak Region are as unique as the Inns themselves. From the Southwestern Egg Bake, to the Pumpkin Pecan Muffins, or the Decadent Black Forest Crepes, we have them all! We can guarantee that there is something to temp the taste buds of every person who samples our cooking, as well as having the opportunity to savor favorite recipes at home!

Here's just a sample of one of the featured recipes you are sure to enjoy from

Simply Authentic Cuisine, Volume 2:

 

 

CHOCOLATE-ORANGE MUFFINS

 

1 cup + 2 Tbsp. sugar
 1/2 cup butter, softened
2 eggs
the grated peel of one orange
 1/2 cup sour cream
1/2 cup orange juice
2 cup all purpose flour
3/4 tsp. baking powder
1/4 tsp. salt
1/2 tsp. baking soda
1/3 cup. semisweet chocolate chips OR  6 oz. semisweet chopped chocolate squares
 
Line or grease and flour muffin cups, set aside. 
 
In a large mixing bowl beat sugar and butter with electric mixer till well creamed. Beat in eggs and grated orange peel. Beat in sour cream and orange until combined.
 
In a smaller bowl mix together flour, baking powder, salt and soda. Mix chocolate into the flour mixture. Gently stir flour mixture (with chocolate) into the butter mixture until combined. 
 
Spoon batter into the prepared muffin cups, filling each 3/4 full. Bake in a preheated 375 degree oven for about 20 minutes or until a wooden toothpick inserted comes out clean.
 
Makes about 18 muffins.
