The Authentic Inns of the Pikes Peak Region of CO are now offering their taste tested recipes free online! 

These cookbooks feature not only favorite breakfast recipes, but also treat you to the wide array of culinary delights that innkeepers prepare for their families and friends. Recipes from the Authentic Inns and Cottages of the Pikes Peak Region are as unique as the Inns themselves. From the Southwestern Egg Bake, to the Pumpkin Pecan Muffins, or the Decadent Black Forest Crepes, we have them all! We can guarantee that there is something to temp the taste buds of every person who samples our cooking, as well as having the opportunity to savor favorite recipes at home!

CHOCOLATE-ORANGE MUFFINS

 

1 cup + 2 Tbsp. sugar
 1/2 cup butter, softened
2 eggs
the grated peel of one orange
 1/2 cup sour cream
1/2 cup orange juice
2 cup all purpose flour
3/4 tsp. baking powder
1/4 tsp. salt
1/2 tsp. baking soda
1/3 cup. semisweet chocolate chips OR  6 oz. semisweet chopped chocolate squares
 
Line or grease and flour muffin cups, set aside. 
 
In a large mixing bowl beat sugar and butter with electric mixer till well creamed. Beat in eggs and grated orange peel. Beat in sour cream and orange until combined.
 
In a smaller bowl mix together flour, baking powder, salt and soda. Mix chocolate into the flour mixture. Gently stir flour mixture (with chocolate) into the butter mixture until combined. 
 
Spoon batter into the prepared muffin cups, filling each 3/4 full. Bake in a preheated 375 degree oven for about 20 minutes or until a wooden toothpick inserted comes out clean.
 
Makes about 18 muffins.
